Mutton Rogan Josh Kashmiri

Mutton Rogan Josh is a signature Kashmiri dish, known for its deep red color and flavorful, aromatic spices. Traditionally slow-cooked, it’s made with tender pieces of mutton simmered in a rich, fragrant gravy infused with Kashmiri chilies and whole spices.

• Heat mustard oil in a heavy-bottomed pot or pressure cooker until it reaches its smoking point (to reduce the pungency). Let it cool slightly before proceeding.
• Add the mutton pieces and sear on high heat until they are browned on all sides.
