Pinapple Raita

Hindustani Handi Pineapple Raita is a unique and refreshing twist on the traditional pineapple raita, served in a clay pot (handi) to add an earthy aroma and authenticity.

• If using fresh pineapple, lightly cook it with a teaspoon of sugar and a splash of water for 3-4 minutes to enhance its sweetness and soften it. Allow it to cool.
• Transfer the raita to a clay pot (handi) for an authentic touch. Let it sit for a few minutes to allow the flavors to blend and the aroma of the handi to infuse into the dish.
